Unfried Chicken with Collard Greens and Cornbread

This was a delicious off the cuff dinner I made for my sister as I was delegated to cook on Tuesdays and Wednesdays, so this is what I came up with.  Below is the chicken recipe...Enjoy!


Unfried Chicken Ingredients:

  • vegetable oil cooking spray
  • 6 chicken breast halves, skin removed (I use boneless)
  • 6 chicken drumsticks, skin removed
  • 3 1/2 cups ice water
  • 1 cup plain nonfat yogurt
  • - - -
  • Breading:
  • 1 cup dried Italian bread crumbs
  • 1 cup all-purpose flour
  • 1 tablespoon Old Bay seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Creole seasoning
  • 1/8 teaspoon freshly ground black pepper
  • Dash cayenne pepper 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano

Preparation:

Lightly coat a baking sheet with vegetable oil spray.
Put the chicken in a large bowl with the ice water. Put the yogurt into a medium bowl. Set both aside.
Put all the breading ingredients into a large food storage bag. Seal and shake well to mix. Remove 2 pieces of chicken from the ice water. Roll each piece in the yogurt. Put the chicken into the plastic bag, reseal and shake to coat thoroughly. Transfer the breaded chicken to the prepared baking sheet. Repeat the process until all 12 pieces are breaded. Spray the chicken pieces lightly with the vegetable oil spray.
Place the baking sheet on bottom shelf of preheated 400° oven; bake for 1 hour, turning the pieces every 20 minutes to allow even browning. Serves 8 to 10.

I want to share this video with you--it has changed my life and it's been something that's been a long time coming, but the day has finally arrived where I have decided to take over my eating habits and my view on food.  Renowned Dr. Joel Fuhrman states "Live to eat, Not eat to live".  I found this video on one the Natural Sista's page where I go to get my hair tips from and she was doing a piece on getting back on track with her eating and getting back to juicing....Check It Out....this just might change your life as it has done mine.......FINALLY!!!

Green Smoothie
(with my GE single serve blender

1/2 Cup of water
5-6 Crushed cubes of ice
1 Cup of Spinach 
(you can add any additional greens you like, 
just make sure that it all are equals to a cup in total)
1/4 Cup of Pineapples
1/2 Banana
4-5 Strawberries (cut up)



LOVE, LOVE, LOVE this blender!!! especially the fact that the container becomes a cup and you can take it with you on the go when you don't have to time to just drink it at home.  You must be sure to read the instructions on usage as the ice needs to be crushed to help out the blending process.  Other than that it's AWESOME!!!

"My Carrabba's Pasta"

I saw a Carrabba's commercial and I fell in love with this pasta and I decided that I would duplicate it my way as it can be a healthy meal.

Ingredients:

Pasta ( Penne, Linguine, Bow Tie, or Angel Hair) whatever you desire will be just fine.
Spinach, Red Peppers, Green Peppers, Orange Peppers, Onions, Garlic, Cherry Tomato(newly added) and Mushrooms (newly added to the recipe....delish!) saute them after dicing and slicing with olive oil until cooked try not to overcook as the spinach gets really dry and wilty, so you may want to add it last.  Boil your water for the past adding a little salt and boil then drain and combine cooked vegetables with pasta in pot mix well and serve, if you want a creamy sauce just add an Alfredo sauce to it and Voila!!! If you aren't watching carbs can be accompanied by garlic bread.  Simply Easy!

After having a conversation with my sister regarding preservatives and extra ingredients in boxed pancakes and how she makes her own--I've decided to open up my Spoonbread and Strawberry Wine cookbook which I absolutely love (my mother purchased the book on a sidewalk sale in lower manhattan) and she brought it home and I fell in love with the book and even had lunch with a friend at the Spoonbread on the Upper Westside in Manhattan.


 Pancake Mix (no different from Aunt Jemima)

  

Finished product! My son absolutely loved them and they were hearty enough that he wasn't able to eat all of them versus Aunt Jemima he would have devoured them....meaning my pancake filled the bottomless stomach....Whoo Hooo!!!! 



 Homemade Sweet Milk Griddle Cakes by Moi (Me)
Compliments of Spoonbread and Strawberry Wine by Norma Jean & Carole Darden

3 cups sifted all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/4 sugar
1/4 teaspoon ground cinnamon
3 eggs
2 cups milk
3 tablespoons melted butter

 Sift flour 3 more times together with the baking powder, salt, sugar, and cinnamon.  Beat eggs, add milk, and pour slowly into the dry ingredients.  Beat thoroughly and add butter.  Drop by spoonfuls onto a lightly greased hot griddle.  When puffed full of bubbles and cooked on edges, turn and cook on other side.

Yield: 2 Dozen small or 1 Dozen large griddle cakes

Variations: Add a cup of blueberries or a cup of strawberries or whatever you would like to add to your griddle cakes.









 



Okay, so last weekend my daughter and I decided to make the Pillsbury Sugar Doughnuts--though they weren't picture perfect they were good when they were hot.  It stills has a taste of the biscuit, but it was an alternative to a sweet tooth.  Here's the recipe enjoy and tell me what you thought:


Prep Time: 15 Min
Total Time: 30 Min
Makes: 10 doughnuts and 10 centers

DIRECTIONS

1 Heat oven to 375°F. 2 Separate dough into 10 biscuits; flatten each to a 2 1/2-inch round. With 1-inch round biscuit cutter, cut hole in center of each round. Dip all sides of biscuits and centers into butter, then into sugar. Place on ungreased cookie sheet. 3 Bake 12 to 14 minutes or until golden brown.
Drizzle a thin chocolate glaze over baked and cooled doughnuts for a decadent, delicious treat!









 


Started my day on the wrong foot and my son asked, if he can make me some pancakes because he knows they would put a smile on my face…….These made my frown turn upside down…Thanks Dai!!
